Day 14

The temperature dropped last night and I slept amazing! I love summer, but the cooler temps has me craving Fall!!!

730am – made my sister and I poached eggs (I had 2) and we shared a peach. It was yummy and a nice change to my typical scrambled eggs. I accompanied it with a robios tea.

I looked through my new cookbook and I have so many new recipes to try. My grocery list is a little intense, think it’s the longest list I’ve ever made but I’m so pumped! Thanks Juli Bauer for the inspiration #paleomg

1030am – was feeling hungry and knew I couldn’t wait for lunch so I had some of the chicken salad I brought to my sisters with cut up peppers. My sister had made muffins (which I couldn’t have) but here is wher I would have made a poor food decision and had something like that vs. thinking to eat chicken salad but definitely a better option and one I know which will stay with me longer

Decided to leave before lunch so I could get my shopping started.  My grocery bill wasn’t as bad as I had thought.  One note – I really wanted bacon.  I remembered there was a brand that didn’t contain sugar that I once found at the grocery store, today not so lucky.  Every single package of bacon contained sugar as one of its ingredients, so no bacon for me!  On my way home I was STARVING so I stopped a B Good, which just opened near my house and got a burger with bacon, avocado and an egg.  IT WAS AMAZING!  I devoured it before I even tasted it.  Then when I got home I got to work.  I had a lot to get prepped for the week to make it another successful week.

I decided I would take a different approach and instead of making full meals I would make portions so I could focus on the entree portion each night and wouldn’t feel sick of what options I had towards the end of the week.

I made; roasted broccoli, roasted potatoes, roasted sweet potatoes (for breakfast), I made Buffalo Chicken Casserole http://paleomg.com/sneak-peek-recipe-from-juli-bauers-paleo-cookbook-buffalo-chicken-casserole/ – (this will be for lunch tomorrow), I cut up leftover peppers, celery and carrots for a snack and I cutup strawberries.  I had frozen some ground beef last week (leftover from the meatballs I made, but didn’t really eat) – so I tried it again this week, instead this time I put them in muffin cups and baked them – hoping I like them more.  I had mushrooms that I didn’t use last week so I cooked those up so they didn’t go bad and I cutup cauliflower and through it in the food processor for cauliflower rice – just trying to cut some steps down for when I get home from work.

For dinner I made Pesto “rice” shrimp stuffed peppers from the new cookbook.   I made the pesto from scratch with pistachios.  I thought I had more in my pantry then I did so the pesto was milder than I would have liked, but it was still really good.  You can use pine nuts or almonds as well for the pesto, I didn’t have any of those on hand but I’ll be buying some to have as back up for next time.

630pm – dinner was ready, I was super hungry.  I had (2) of the stuffed peppers with cutup peppers on the side.  Now, I am not one for stuffed peppers but stuffed peppers with cauliflower rice, pesto and shrimp – now that’s my jam!  It was delicious and super easy.

Feeling really good about being prepared for the upcoming week.  Tomorrow will mark the 1/2 way mark … woohoo!

Day 13

Slept so good last night. It’s so nice to be able to have the windows open at night. 

Got up and got ready to go for a nature hike with my roomie. She’s not one for getting up early but she was ready on time!  
715am – made myself some breakfast before hitting the trail. (3) scrambled eggs, sweet potatoes and a handful of raspberries and blueberries. 

8am – went on a 3 mile walk. This trail was amazing. Exactly what I was looking for. It’s amazing how some time spent in nature is really so good for the soul. 

915am – stopped at the local coffee shop and got an organic fresh squeezed juice. It had cucumber, carrot, Apple and ginger in it. I added a shot of wheat grass. It was delicious. 

Got home and decided to clean the house. It felt so good to get that accomplished 

12pm – had some chicken salad (with homemade mayo) topped with avacado and some cut up peppers. It was yummy! 

Headed up to my sisters to go visit the family. Had a seltzer can and full bottle of water on my way up. 

4pm – was feeling hungry. Had brought (2) meatballs with me to my sisters but just wasn’t craving them so I had a fuel for fire and a peach, as I enjoyed my seltzer in a wine glass 😉

7:30pm – had dinner. One of the things I love about coming up to my sisters is being able to grill. I had picked up steak tips from the love butcher and some farm zucchini and summer squash. My sister roasted some potatoes with lots of seasonings. It was delicious. 

Overall it was a great day.  Relaxing and productive followed by some good quality time with Marley and some snuggles with Gwen.

Day 12

2:30am – woke up and couldn’t go back to sleep.  I couldn’t shut my brain off and started thinking of all the work I had to do.  It took me an hour and lots of deep breaths because my heart was racing to get myself back to sleep.

By the time my alarm went off it was very difficult to get out of bed, I did not sleep well at all.

6:20am – had breakfast, (2) scrambled eggs, sweet potatoes and handful of raspberries and blueberries.

8am – got to the office and made myself a green tea.  I was dragging butt, luckily today is Friday 🙂

10am – was feeling hungry and needed a pick me up so I had a peach (I am seriously addicted to these lately, mostly because they are in season and so delicious) and I accompanied it with an RX Bar.

12pm – heated up lunch, same as yesterday.  Leftover beef ribs with potatoes and broccolini.

2:30pm – was feeling in a slump … but pushed past it.

4:15pm – its “Wine” Friday, I was pretty hungry so I had a shake I had made and brought with me to work and had a Chomps beef stick with water … really wanted a glass of wine though 🙂

5:15pm – wow, an hour after my shake I had stomach pains, like the ones I’ve had recently. So weird. Don’t know what ingredient caused that but I’ll be paying attention for sure now, because that wasn’t fun! 

6:30pm – got home and made some homemade mayo

7:15pm – made myself some chicken salad (I had made the shredded chicken earlier this week) and cut up some raw peppers. I of course accompanied it with my seltzer in a wine glass. 

I am really hoping to get a good nights sleep tonight, I really need it. I’m going to get up and go for a hike in the morning. I think some time in nature will do me some good, it’s always my sanctuary. 

I really want to get into a hobby. I think it would good for my brain (to shut off) and my soul. I think maybe I’ll go to the craft store tomorrow. I want to make a dream catcher for my room so maybe I’ll start there.

Day 11

4:30am – my alarm went off, it was time to get up and get a workout in 🙂

WARMUP

Squat, Toe Touches and Shoulder Circles 3 x 15 each

25 KB Swings (its been awhile since I’ve done KB swings so I started with the 18 lb)

Then 1/2 mile run, slow pace should take approx. 4 min followed by a cool down walk – took me a total of 9 min for the run/walk

Got back to my house and had 20 min before I needed to shower which was nice so I could cool down.

6:20am – had (2) scrambled eggs, sweet potatoes and a handful of raspberries and blueberries

8am – got to work fast so I decided to stop at Dunks on my walk from the train and indulge in a large iced tea with extra lemon 🙂

10:45am – was hungry so I had a peach with a handful of cashews

12:30pm – heated up lunch, today was leftovers from my crockpot ribs with purple fingerling potatoes and broccolini.  I enjoyed it with a seltzer.

1:15pm – today was a bit stressful managing a bunch of different clients and trying to stay on top of it so I started thinking of going home and indulging in a glass of wine.  I’ve been wearing an essential oil bracelet that I have been using with lavender oils.  So I stopped and inhaled the smells and took a moment to take some deep breaths, this seemed to help.  I might go take a walk in a bit to get some fresh air as well.

3pm – we had a vendor visit our office, showcasing liquid nitrogen ice cream.  Luckily I’ve had it before so it was easy to pass up.  But then Westin Copley hotel came in and dropped off cupcakes from Georgetown Cupcake.  Cupcakes are my weakness.  But I held strong and enjoyed an RX bar to keep me content.  It worked.  I am sure the cupcake would have been delicious but I didn’t miss it.

7:30pm – got home and tidied up the house a bit.  Then heated up some leftovers.  It was my chicken, cauliflower and sweet potato curry dish.  It was delicious.  I of course made myself a seltzer in a wine glass.  Today I was really craving wine but I held strong.

When I got home from work today, I had a new cookbook in the mail today, I was so pumped.  Juli Bauer’s Paleo Cookbook.  It’s amazing and I can’t wait to try all the recipes.  If you don’t follow her blog or haven’t checked out her other cookbook you are seriously missing out.  Its amazing and its where I get most of my inspirations from.

Yesterday I got my first Stitch Fix (thanks to my friend Jen for the great birthday gift!).  Have you ever tried it?  I recommend it.  Its like having a personal stylist.  I didn’t love everything they sent but they did a pretty good job and I kept a really nice pair of jeans.  I just setup my next delivery for 2 weeks.  Its such a fun experience.  Now I can’t stop pinning fall outfits to help inspire them on my next shipment!

Notes so far.  I remember on most Whole30’s that by now I have experienced the “sugar dragon” – I have not had any of these side effects yet (that must be a good sign!).  I also remember usually by now thinking food tasted like dirt, I am not having that effect either.  That’s either a sign that I have been good with my eating for awhile so other than not drinking not too much has changed in my diet or because my health has changed so much that maybe I am just experiencing this Whole30 on a different level.  Hmmm….

Day 10

* I didn’t keep track of my entire day so this will be most by memory…

I slept good last night and woke up hungry.

6:15am – I had (2) scrambled eggs with sweet potatoes and handful of raspberries and blueberries.

When I left for work I was craving a Dunkin Donuts iced tea with extra lemon so I stopped to pick one up for my drive.  I only got a medium (I usually get a large) and it was just enough to get me to the train station.

9:45am – was hungry so I had a peach with a handful of cashews

12pm – had a client lunch where it was being catered (by my company) so I was prepared and had pre-ordered a grilled chicken salad with oil & vinegar on the side.  It was so boring!  I was really craving my lunch back in the office but I held strong and passed by the potato chips and fresh baked chocolate chip cookies.

3pm – was hungry so I heated up my (2) meatballs, had a seltzer and had a chop beef stick.  It hit the spot

7:30pm – got home and felt hungry.  Decided to eat my leftover fish since I knew it probably only had one more day.  The fish wasn’t my favorite reheated but the avocado & peach salsa hit the spot.  I had some cauliflower rice and asparagus.  Not the most exciting dinner but it worked.

Tonight as I drove home I realized I was craving my seltzer with lime juice in my wine glass.  I couldn’t wait to get home and made it.  It has become something I really look forward to to “unwind” from the day.  I guess its a new good habit and its very refreshing.

I am getting up early tomorrow to get in another WOD before work.  I have also made plans to go for a hike on Saturday morning with my roommate.  I would say the one thing I notice every time I do a Whole30 is how productive and active I like to be.  I like being busy and keeping myself occupied.  I think most of it has to do with so I’m not thinking about drinking or snacking.  I have made a list of some “crafting” I want to do … watch out now!

Day 9

5:45am – my alarm went off.  I needed to get up even though I was staying home from work today so I could get in a light breakfast.  This would be the last time I could eat until approx. 2pm.  I had made myself a shake last night to make it easy. Since I was up I decided I should get a workout in to be productive.

11:30am – my dad arrived and we were off to Woburn for my Upper Gastrointestinal Endoscopy.  I was hungry so was looking forward to having this over so I could eat.  I remembered that after my colonoscopy they made me eat something before I was discharged so I packed some Whole30 compliant snacks just in case.

2:15pm – I survived!  I don’t remember it, thanks to some good narcotics.  Although this time when I woke up in recovery I was really out of it, much more than when I had my colonoscopy.  I have a gag reflex so they gave me this spray which numbed my interior of my mouth and throat, I was still feeling those effects.  The doctor came in to go over the results.  They took more biopsies as they found more ulcers, this time instead of just in my colon they are now also in my stomach.  With this new information the doctor agreed with me that I could hold off on going on Humira and instead try a less evasive drug protocol (Lialda) to help with the inflammation and ulcers.  I was relieved!  She said I will have to come back in 3 months and have this procedure again to see if my ulcers have gotten better, worse or the same.  I am meeting with her next week in her office to go over all my test results.  One of my blood tests I ddi showed that my celiac level was high.  In the past 2.5 weeks I have had a colonoscopy, an MRI on my bowel and now an upper gastrointestinal endoscopy.  I feel like a pro in the medical procedure world now.  Haha.  Looking forward to speaking with her next week once all my results are in and see what is causing all of this flare up and how to get back to a healthy me!

Because of the procedure, they didn’t want me to eat for another 2 hours.  My dad took me to get my prescriptions filled and then took me home.  I had an RX bar, I waited 90-minutes, when I got home.  Then I realized how hungry I really was so I heated up (2) meatballs and made myself a tea.  I was still feeling so out of it so I decided to lay down and watch a movie.

6pm – I had put some ribs in the crockpot when I left to go to the Dr’s.  I roasted some purple fingerling potatoes and broccolini (fresh from a local farm).

7pm – I had dinner.  I was starving.  It was delicious and my side of seltzer in a wine glass was the perfect accompaniment.

All in all, it was a good day.  I am really tired and still foggy so I am looking forward to a good nights sleep.  But I am happy that I got more information on my health and feel like hopefully soon I’ll have the answers I need to a healthier version of myself.  Also, I am very grateful to my work for being so understanding this past month with all of my doctors appointments.

Day 8

Got 8.5 hours of sleep.  I woke up at 430am wide awake, should have taken that as a sign to get up because I went back to bed and then when my alarm went off at 545am I didn’t want to get up.

6:15am – had (2) scrambled eggs, sweet potatoes and a handful of raspberries and blueberries.

I wanted to stop for a Dunkin Donuts ice tea on my way to work but didn’t have time.  Instead when I got to the office I made myself a decaf Green Tea.

9:15am – surprisingly I was hungry, so I had a peach I brought and a handful of cashews.  It hit the spot.

12:30pm – reheated my leftovers from last night (paleomg.com) and enjoyed it with a seltzer.  I sat at my desk to eat, which I typically do at work.  I work and eat lunch simultaneously.   Today I made the effort to take time to eat.  It took me over an hour to eat my entire lunch (well and that I kept getting distracted as well).

3:30pm – felt hungry so I had and RX Bar. I brought (2) meatballs but I actually forgot about it  

6:15pm – went to the Chiropractor. She cleared me for a week, making progress …

7pm – got home and got to cooking. I was making http://paleomg.com/grilled-swordfish-peach-avocado-salsa/ instead of swordfish I used cod as Hannafords had it as a special from Maine. I accompanied the fish with roasted cauliflower rice and asparagus. I didn’t grill the fish, I baked it in the oven instead. 

8pm – cooking was complete. I didn’t let the fish marinate for an hour, it only marinated for 30-minutes. It was delicious. I think the fish would have been even better grilled and maybe marinated for more time but the avacado and peach salsa really hit the spot. I enjoyed dinner with my lime seltzer with fresh squeezed limes. It was super refreshing. 

Tomorrow I go for my endoscopy. Then hopefully I’m done with procedures for awhile. I will get up early to get a workout in since I’ll be working from home in the morning. I can have a light breakfast at 630am but then only clear liquids until my procedure is done at 2pm
